Chipotle Coppa – Dry Cured Pork Shoulder With Chipotle Chilli
Our first ever 3-Star Great Taste Awarded product. This dry cured pork loin is cured, air dried and equalised over a several months to give it the best texture and flavour. Its coating of cayenne, chipotle, garlic and pepper flakes impart a tingle of heat but accompanies such depth of smokey flavour to the meat without actually smoking it.
What is the Great Taste Awards and how good is a 3-Star Award? Out of over 14,000 products entered worldwide to the Guild of Fine Foods this was one of only 218 products to receive such high praise!
What makes it worthy of 3 Stars? Care and attention is paid to every piece of meat we receive, from finely trimming this pork loin to make into the Coppa muscle, all of the silver skin is removed and loose parts trimmed to make sure no unwanted bacteria hang out in any loose flaps of meat. We then weigh the individual loin, create a very specific rub to the one hundredth of a gram and rub it all over to ensure the curing process starts. We do this part the same day we receive the meat.
The meat then cures for a week or two to remove the juices that would otherwise spoil the meat, we turn the meat and massage each piece to ensure the cure is working as it should do. Following on from this we then check the meat to ensure the desired effect has worked correctly and case it in a ox bung liner, net it up and string it up to ensure a cylindrical shape. The meat in its case is checked for any air pockets and we then brush with penicillin to create an environment that will protect the meat from any unwanted molds.
