Whilst Pork isn’t a commonly used meat in India, this is a Christian dish so hence why Pork is used. Freshly (home grown by us!) green chillies with Garlic and Ginger with a hint of Tamarind make this taste like a smoother style original of the Portuguese dish carne de vinha d’alhos (meat marinated in white wine vinegar with garlic), that made its way to India in the 15th century along with Portuguese explorers. Hot without being a face melter!!
