Ingredients

Method

For the Ribs
 2 racks baby back ribs (approx 1 Kg each)
 1 Tbsp maldon sea salt
For the Marinade
 140 ml haitian hottie chilli sauce
 150 ml water
 2 limes, zested and juiced
 5 cloves garlic
 4 Tbsp dark soy sauce
 10 cm ginger, finely grated

Combine all of the marinade ingredients together in blender until very smooth.

Remove any membrane from the racks of ribs and then place into a large tray with all of the marinade for at least 60 Minutes covered up.

Heat the BBQ and brush the grill clean, turn the heat to low and put a little oil on the grill bars and then place the ribs bone side down on the grill for 15 Minutes.

Put the ribs up to the area where you placed your cooked meats and turn the ribs over and cook meat side down for a further 30 Minutes. This will allow the indirect heat to add flavour and cook them slowly. Cooking them fast will ruin the quality of the meat.

Brush the ribs with marinade as you see fit and ensure the cover of the BBQ is replaced to ensure the flavour stays locked in.

Stack the ribs on top of each other and rate them around for the rest of the cooking time.
