Ingredients

Method

For the burger
 500 g minced beefideally chuck
 2 eggsyolks only
 1 tsp garlic powder
 50 ml oyster sauce
 3 slices white breadblitzed to crumbs
 ¼ tsp maldon sea saltfreshly ground
 ¼ tsp black pepperfreshly ground
For the burger building
 4 slices, cheddar cheese
 4 tbsp burger relish
 4 brioche burger buns
 1 beef tomatosliced
 1 baby gem lettucewashed and leaves seperated

Place the minced beef in a large bowl with the egg yolks, garlic powder, oyster sauce, white bread crumbs and the seasoning.

Kneed the mixture together for 2 Minutes until well combined.

Divide the beef into 4 equal sized pieces. If you have a burger press then make burgers as your press describes, alternatively use a chefs ring or make a ball shape and flatten gently with the palm of your hand.

Ideally the burger will be 1/2 inch thick , fry on both sides until lightly charred and cooked through. On the final turn place the sliced cheddar on top to melt.

Warm the burger buns or lightly toast if you choose to, place a couple of crispy lettuce leaves then the burger followed by a slice of tomato and then the most important part a good dollop of the burger relish. Get stuck in and let us know if you agree how good it is.
