Remove the chicken breasts from the fridge and butterfly them by cutting in half width ways.
You may want to put several little slits all over the chicken, this helps the spice mix really get into the chicken in the areas that won't come in direct contact with the heat source.
Place the chicken breasts on a large plate and sprinkle the seasoning mix over the chicken. Do both sides and then rub the excess seasoning into all the nooks and crannies to ensure good coverage.
Put back in the fridge for 10 Minutes to allow the mixture to soak in and become dry on the outside.
Remove from the fridge and place. Heat the oil in a large frying to medium hot, place the chicken breasts in one at a time being careful no tot splash the hot oil (place in the pan away from you!).
Cook on each side for approximately 4 Minutes until partially charred yet cooked through in the middle. Placing a lid on the frying pan will speed up the cooking process, by allowing the heat to radiate through pan more - this will also keep the chicken juicier.
Serve with French fries and salad or a oven baked jacket potato. Dollop on your favourite hot sauce.
